Homemade Tabbouleh


This is really yummy.

1 c. bulgur wheat
1 1/5 c. boiling water
1 T olive oil
2 T lemon juice

Put bulgur wheat in a bowl, add boiling water and cover the bowl.  Let sit for about an hour on the counter.  Then place in the fridge while you get everything else ready.

1 handful of cilantro
1 handful of parsley
1 green onion
1 tomato
1/2 cucumber peeled and seeded
1/2 can olives
salt/pepper

Chop the cilantro, parsley, and green onion finely, cut up tomato and cucumber and oilves into small bite size pieces.  Add all this to the chilled bulgur.  Add salt and pepper to taste.  Add more olive oil or lemon juice if you like.  You can add all sorts of other things if you want as well, it's your tabbouleh!

Mint is usually a part of tabbouleh but I couldn't find any at the grocery store and I dont' grow any yet.  Chickpeas are a thought as well.  A jalapeno would add a little heat that could be delisicous.  Let your imagination run with your tabbouleh!!
